Huacatay

Huacatay (sounds like waa-kuh-tai) has long, erect stems with clusters of small, pale yellow flowers and deeply cut, fragrant leaves that smellof mint with notes of cilantro, licorice, and citrus. Native to the grasslands of South America, it is prized for its many culinary, medicinal, and beverage uses.

Traditionally harvested when in flower and dried for later use. Also valued for controlling root-creeping weeds and soil nematoides.

The leaves yield a beautiful yellow dye.

Full sun. Height 6′. Drought resistant. Annual herb.
